Da Hong Pao is one of the most famous and highly regarded oolong teas, originating from the Wuyi Mountains in Fujian Province. It is known for its complex, layered flavour profile and the distinctive character of yancha — “rock teas” shaped by the unique mineral-rich terroir of Wuyi.
Flavour and Aroma Profile
Opening:
The first sip reveals a full, silky texture. The initial flavour is slightly smoky and mineral, the result of the traditional roasting process that enhances depth and structure.
Middle:
As the tea unfolds, more delicate floral and fruity notes emerge. A gentle orchid-like aroma appears, characteristic of many high-quality oolongs. In the background, subtle hints of dried fruits — figs or dates — combine with a soft, natural sweetness reminiscent of honey.
Finish:
The aftertaste is long, pleasant, and slightly mineral, typical of teas from the Wuyi Mountains. Some batches of Da Hong Pao may also exhibit very light spice notes, such as cinnamon or clove.
The overall composition is harmonious and multi-dimensional — a tea that reveals new nuances with each infusion.
Net weight: 25–100 g
Brewing: Use 5–7 g of tea per 100 ml of water at 90°C.
Brew multiple times — typically 3-4 infusions.
Start with 10 seconds and gradually increase up to about 2 minutes.
Best brewed in: a porous clay teapot dedicated to heavily oxidised oolong (yancha style).
